On the Menu: Pineapple & BBQ Chicken Naan Pizza
Welcome back to another edition of “On the Menu”, a place where I share some of my tried and true recipes in case you’re looking for a little dinnertime inspiration, along with serving suggestions and tips for getting dinner on the table quickly. This week’s recipe is for a delicious sweet and savory Pineapple & BBQ Chicken Naan Pizza, guaranteed to be a new favorite for your family.
Pineapple & BBQ Chicken Naan Pizza
- 4 slices naan bread (I use the regular size, 2 per pkg. Stonefire brand)
- 2 chicken breasts
- 2 cups honey BBQ sauce
- 8 oz. pkg. cream cheese, softened
- 2 cups gouda cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/4 cup red onion, diced
- 1 cup pineapple, cut into small cubes
Spray a slow cooker with nonstick spray. Spread 1/2 cup BBQ sauce on bottom of slow cooker and place chicken breasts on top, covering with another 1/2 cup of sauce. Cook on low heat for 2-3 hours. Shred chicken.
Preheat oven to 375 degrees. Spread 2 oz. cream cheese on each slice of naan bread, followed by 1/4 cup BBQ sauce. Sprinkle with 1/2 cup gouda cheese, followed by 1/4 cup mozzarella. Top with shredded chicken, red onion, and pineapple.
Bake for 10-15 minutes, or until cheese is melted. Allow to cool slightly before slicing. Enjoy!
As a side note, I recently started using the toaster oven that my husband surprised me with for Christmas to bake this recipe, and I have to say it does a pretty amazing job of getting the pizza just right. If you are in the market for a toaster oven, I highly recommend it. Besides just toasting, it also bakes, broils, reheats, roasts, warms and slow cooks – it’s been such an easy way to make a lot of our favorite recipes without the huge energy draw of using our regular oven. The toaster oven comes with a pizza pan, baking pan, and broiling rack, but I also recently discovered that this 9×13 pan fits inside if I move the wire rack down to the lowest position (great for baking casseroles quickly). Peach Blossom Tips:
*To speed things up on a busy weeknight, a good option is to slow-cook the BBQ chicken over the weekend and save it in the fridge for meal prep night. The cheeses could also be shredded ahead of time, too – great project for the kids!
*I’ve made the vegetarian version of this pizza quite a bit and it’s just as yummy! Simply omit the BBQ chicken from the recipe – but don’t forget to still spread a layer of BBQ sauce over the cream cheese. It’s the key ingredient that ties all of the flavors together.
*This pizza goes great with a Golden Raisin and Apple Salad topped with roasted sunflower seeds – and it’s delicious tossed in this creamy dressing.
