Welcome back to another edition of “On the Menu”, a place where I share some of my tried and true recipes in case you’re looking for a little dinnertime inspiration, along with serving suggestions and tips for getting dinner on the table quickly. This week’s recipe is for a delicious sweet and savory Pineapple & BBQ Chicken Naan Pizza, guaranteed to be a new favorite for your family.

Pineapple & BBQ Chicken Naan Pizza

Servings 4


  • 4 slices naan bread (I use the regular size, 2 per pkg. Stonefire brand)
  • 2 chicken breasts
  • 2 cups honey BBQ sauce
  • 8 oz. pkg. cream cheese, softened
  • 2 cups gouda cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup red onion, diced
  • 1 cup pineapple, cut into small cubes


  1. Spray a slow cooker with nonstick spray. Spread 1/2 cup BBQ sauce on bottom of slow cooker and place chicken breasts on top, covering with another 1/2 cup of sauce. Cook on low heat for 2-3 hours. Shred chicken.

  2. Preheat oven to 375 degrees. Spread 2 oz. cream cheese on each slice of naan bread, followed by 1/4 cup BBQ sauce. Sprinkle with 1/2 cup gouda cheese, followed by 1/4 cup mozzarella. Top with shredded chicken, red onion, and pineapple.

  3. Bake for 10-15 minutes, or until cheese is melted. Allow to cool slightly before slicing. Enjoy!

As a side note, I recently started using the toaster oven that my husband surprised me with for Christmas to bake this recipe, and I have to say it does a pretty amazing job of getting the pizza just right. If you are in the market for a toaster oven, I highly recommend it. Besides just toasting, it also bakes, broils, reheats, roasts, warms and slow cooks – it’s been such an easy way to make a lot of our favorite recipes without the huge energy draw of using our regular oven. The toaster oven comes with a pizza pan, baking pan, and broiling rack, but I also recently discovered that this 9×13 pan fits inside if I move the wire rack down to the lowest position (great for baking casseroles quickly). Peach Blossom Tips:

*To speed things up on a busy weeknight, a good option is to slow-cook the BBQ chicken over the weekend and save it in the fridge for meal prep night. The cheeses could also be shredded ahead of time, too – great project for the kids!

*I’ve made the vegetarian version of this pizza quite a bit and it’s just as yummy! Simply omit the BBQ chicken from the recipe – but don’t forget to still spread a layer of BBQ sauce over the cream cheese. It’s the key ingredient that ties all of the flavors together.

*This pizza goes great with a Golden Raisin and Apple Salad topped with roasted sunflower seeds – and it’s delicious tossed in this creamy dressing.

    You know how I dislike cooking for one person. This is one of my exceptions. One of the tastiest pizzas I’ve eaten. It’s also good the second day, which makes me very happy. One less meal to prepare.
