On the Menu: Extra Cheesy Pasta Bake

Welcome to another edition of “On the Menu”, a place where I share some of my tried and true recipes in case you’re looking for a little dinnertime inspiration, along with serving suggestions and tips for getting dinner on the table quickly. Up this week, a quick and easy recipe for Extra Cheesy Pasta Bake. This one is a real crowd-pleaser, and a great dish to serve if you are having company because not only is it tasty, it’s also a breeze to assemble ahead of time and then just pop into the oven when your guests arrive.

 

Extra Cheesy Pasta Bake Recipe

Extra Cheesy Pasta Bake

Ingredients

  • 1 pound macaroni noodles
  • 2 jars spaghetti sauce (26 oz.)
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 green bell pepper, chopped
  • 1 cup sour cream
  • 1 pkg. cream cheese (8 oz.)
  • 1/2 cup green onions, chopped
  • 4 cups Italian cheese, shredded

Instructions

  1. Preheat oven to 375 degrees. In a large pot, heat the 2 jars of spaghetti sauce, stirring in the garlic powder, salt, pepper and chopped green pepper. Simmer for 15 minutes. Remove from heat.

  2. Cook the macaroni noodles according to package instructions and drain. Pour noodles into a large mixing bowl. Add the sour cream, cream cheese, green onions, 2 cups of the Italian cheese, and half of the sauce. Stir until everything is combined. 

  3. Spray a 9x13 baking dish with cooking spray. Add noodle mixture to baking dish, cover, and bake for 20 minutes. Remove cover, sprinkle with remaining 2 cups of cheese, and bake an additional 5-10 minutes. 

  4. Add the remaining sauce to a large dish and spoon onto individual portions for serving.

Peach Blossom Tip:

I usually serve this with garlic bread or toasted naan, and a large Italian salad (here’s a good recipe for one). It’s yummy with the suggested homemade vinaigrette, or when I’m short on time this store-bought dressing has been a favorite lately. Takes me back to when I was in high school and going to Olive Garden for their Soup, Salad and Breadsticks was kind of a big deal.
